Puff Pastry Tart With Brie, Cranberries, Apple Slices and Cinnamon Spiced Honey

25 minutes; Yield:5 slices 

Ingredients:
  • 1 sheet puff pastry (thawed)
  • 3/4 cup brie cheese (sliced)
  • 1 apple (sliced)
  • 1/2 cup chutney (onion & beet works well)
  • 1/4 cup cranberries (cut in half)
  • 1/4 cup blackberries 
  • 1/4 cup pecans (chopped) 
  • 4 sprigs fresh thyme 
  • 2 Tbsp Cinnamon Spiced Drizzle Honey

Instructions:
  1. Preheat oven to 425°F and line a large baking tray with parchment paper.
  2. Unroll the pastry on a baking sheet. Fold in edges of pastry ½ inch to form a border and crimp edges.
  3. Pierce all over the inner part of the puff pastry with a fork. Spread the onion and beet chutney and bake for 10 minutes. The pastry should be puffed and starting to colour. 
  4. Remove from the oven and top with the apple slices, brie, cranberries and blackberries overlapping them to cover the tart. 
  5. Drizzle with 1 Tbsp Cinnamon Spiced Honey, then put back into the oven for a further 12-15 minutes until the cheese is bubbling and the apple slices are soft.
  6. Sprinkle with chopped pecans, garnish with fresh thyme sprigs and drizzle with additional Tbsp of honey before serving. Enjoy!
