Why are there two different colours of raw honey?

Drizzle showcases natural, seasonal varieties in our honey – specifically a separate harvest from the spring and one from the summer. These kinds of honey are taken from the same fields, but different seasons. The flowers that bloom in each of those seasons change the colour and flavour of the honey. Unlike our competitors, we like to highlight these beautiful differences, rather than blend them together.

What is creamed honey?

Drizzle is creamed honey. Our honey is produced in Alberta which by the nature of our flower's nectar, produces honey that goes grainy quickly aka crystallizes. To prevent this, we cream our honey to break down the crystal structure and make it a luxurious, smooth texture.

If you want really runny honey simply set your Drizzle jar in a bowl of warm water or heat lightly your favourite way and it will soften easily. On a warm day in your house, it will even soften up; it doesn't take much!

Does honey go bad? How should it be stored?

We put “best before” dates on Drizzle products as a guideline. However, honey is one of the only foods that doesn’t spoil. It is also your preference on whether you store it in the refrigerator or keep it on your pantry shelf.

Why buy local honey?

Purchasing local is important on so many levels for a conscious consumer. Here are some of the top reasons why purchasing local honey is important:

Purchasing local honey keeps our local bee farmers in business and our bee populations thriving. There are current issues with major honey brands purchasing “fake” honey, which is often adulterated, from abroad. Our local beekeepers cannot compete with these cheap foreign prices to produce their honey on Canadian fields, and in some years face bankruptcy situations. Even worse, some major brands are blending foreign honey with Canadian honey and labelling products as Canada-made honey, so consumers often do not know what exactly they are buying. The best way to ethically support the honey industry is to purchase from a company who clearly spells out that they are 100% Canadian.

It is better for our planet because it reduces the environmental costs associated with food miles; that is how far your food has to travel from farm to plate and the associated fuel used to do this.

Sourcing locally keeps dollars in our local economy. On the other hand, purchasing from outside sources dilutes these dollars because every stage that links the buyer to the seller (think trucking systems, warehouses, storefronts) takes a cut out of dollars that we could see go directly to our local business owners, producers and beekeepers. Every time you buy from a small business like ours, an actual person does a little happy dance!

Although still under scientific review, local honey may help with allergies. It is believed that repeated exposure to pollens that trigger an immune response will help build up antibodies, resulting in less histamine release and reduced pollen allergy symptoms.

What is the benefit of raw honey?

Raw honey is honey that hasn’t been heated or microfiltered so it still contains healthy enzymes, vitamins and minerals. When honey is heated some enzymatic properties are destroyed and when honey is heavily filtered the pollen and beeswax are removed, and thus many of the vitamins and minerals (pollen is rich in proteins, free amino acids, vitamins and folic acid). This is also the reason why raw honey has more complex flavours and better showcases the terroir (or flavour) of the area it was produced.
